Vegetarian Creole Gumbo

This Vegetarian Creole Gumbo is super flavorful and delicious! This will definitely warm you up and has a kick too! You’ll definitely want to keep this on file for Mardi Gras! It’s full of vegetables and is rich and decadent!

Serves 6

Ingredients:

1 tablespoon of flour

1 stick of butter

1 white onion, diced

1 cup celery, sliced

1 yellow pepper, diced

1 zucchini, quartered and sliced

1 yellow squash, quartered and sliced

2 large tomatoes, chopped

4 cloves of garlic, minced

1 box of vegetable broth

½ teaspoon of dried basil

1 tablespoon of fresh thyme, chopped

1 tablespoon of fresh oregano, chopped

1 teaspoon of cayenne pepper

1 tablespoon of paprika

1 tablespoon of salt

1 bag of frozen okra

2 cups of cooked rice

Green onions for garnish

Instructions:

Sauté the onion and garlic in butter until they are translucent.

Add the celery and pepper and sauté the vegetables until they are tender and fragrant.

Sprinkle in the flour and lightly brown the mixture.

Pour in the vegetable stock and whisk to combine.

Add the zucchini, squash, and tomatoes.

Season the soup with the herbs and spices.

Simmer the soup until the tomatoes have cooked completely and the vegetables are tender.

Add the frozen okra and cook for five more minutes.

Ladle the gumbo into bowls and garnish it with rice and green onions.

Add a dash of your favorite hot sauce and enjoy!
