Watermelon Radish Salad

I bought some really cool looking watermelon radishes at the farmers market last week. I used some pretty lettuce I bought there as well and made this delicious salad. The avocado makes it a filling meal and the radishes are crisp and have a nutty flavor. I topped it with a cilantro shallot vinaigrette that made the salad so delicious! You will love it!

Ingredients:

For the Salad:

1/2 pound baby lettuce mix
1 watermelon radish
1 avocado

For the Dressing:

1/4 cup apple cider vinegar
1/4 cup olive oil
1 tablespoon honey
1/4 teaspoon salt
1/4 teaspoon pepper
1 shallot minced
1/4 cup cilantro finely chopped

Directions:

Use a mandoline to thinly slice the watermelon radish.

Quarter the slices.

Cut the avocado into bite sized pieces.

Wash the lettuce mix and spin it dry.

In a canning jar, combine the dressing ingredients and shake the mixture well.

Top the lettuce with the avocado and watermelon radish pieces.

Top the salad with the dressing.
