Watermelon Radish Salad

I think this recipe for Watermelon Radish Salad should be a go-to for a light fall lunch. I bought some really cool looking watermelon radishes at the farmers market last week. I used some pretty lettuce I bought there as well and made this delicious salad. The avocado makes it a filling meal and the radishes are crisp and have a nutty flavor. I topped it with a cilantro shallot vinaigrette that made the salad so delicious! You will love it!

Serving Size: 4

For the Salad:

Ingredients:

1 pound baby lettuce mix
2 watermelon radishes
1 avocado

Instructions:

Use a mandoline to thinly slice the watermelon radish.

Cut the avocado into bite-sized pieces.

Wash the lettuce mix and spin it dry.

Top the lettuce with the avocado and watermelon radish pieces.

Top the salad with the dressing.

For the Shallot and Cilantro Vinaigrette:

Ingredients:

1/3 cup olive oil, plus one tablespoon

2 tablespoons apple cider vinegar

2 tablespoons maple syrup

2 tablespoons Dijon mustard

2 shallots, minced

1/4 cup fresh cilantro, chopped

Salt and pepper to taste

Instructions:

In a small pan, heat one tablespoon of olive oil over medium heat.

When the oil is shimmering, add the minced shallots.

Let the shallots cook until they are fragrant and translucent.

Transfer the shallots to a small bowl.

Add the olive oil and vinegar and whisk the mixture.

Add the mustard, maple syrup, and cilantro.

Whisk the dressing until it is creamy and well combined.

Add salt and pepper to taste.
