These muffins are simple and classic. They go well with chili. You could spice them up by adding green chilies or jalapeños too.
Serving Size: 12 muffins
Ingredients:
1 cup of cornmeal
1 cup of all-purpose flour
⅓ cup of sugar
2 teaspoons of baking powder
½ teaspoon of salt
1 egg
1 cup of milk
¼ cup of vegetable oil
Instructions:
In a large bowl, combine all ingredients and mix them thoroughly.
Spoon the mixture into 12 muffin liners.
Place the filled liners into a muffin tray.
Cook the muffins at 375 degrees for 20 minutes.
Serve the warm muffins with butter.
