Classic Corn Muffins

Classic Corn Muffins

These muffins are simple and classic. They go well with chili. You could spice them up by adding green chilies or jalapenos too.

Serving Size: 12 muffins


1 cup cornmeal

1 cup all purpose flour

⅓ cup sugar

2 teaspoons baking powder

½ teaspoon salt

1 egg

1 cup milk

¼ cup vegetable oil


Combine all ingredients and mix them thoroughly.

Spoon the mixture into 12 muffin liners.

Place the filled liners into a muffin tray.

Cook the muffins at 375 degrees for 20 minutes.

Serve the warm muffins with butter.
