When I was at Lotsa Pasta the other day, I picked up this pretty pappardelle pasta and thought vodka sauce would be perfect with it. My kiddos love this sauce and sometimes it’s nice to have a meal we all want to eat!. It turned out to be light and fresh!
Serving Size: 8
2 ounces butter
1 large onion chopped
3 cloves garlic chopped
1 can crushed tomatoes
1 can tomato sauce
½ cup vodka
1 cup heavy cream
1 cup Parmesan
2 teaspoons salt
1 teaspoon black pepper
1 teaspoon basil
1 teaspoon oregano
(add crushed red pepper for a kick)
Saute garlic and onion in butter until they are translucent.
Add the tomatoes, tomato sauce and spices.
Reduce heat and add the cheese, cream and vodka.
Cook on low until cheese is melted and the sauce has a creamy consistency.
Serve over pappardelle pasta and garnish with freshly grated Parmesan.
