This simple classic is a great weeknight supper! This recipe is super tasty and hearty for a fall evening! The fresh thyme and red wine add great flavor and I love it in these new bowls that I picked up at World Market!
Serving Size: 4
3 vidalia onions
1 stick of butter
1 cup red wine
1 tablespoon fresh thyme
1 teaspoon kosher salt
1 teaspoon sugar in the raw
4 slices of french baguette
8 slices of provolone
1 box vegetable broth
Saute onions in butter over medium heat.
Stir frequently so that onions slowly caramelize.
When onions are lightly browned, add red wine.
Add the herbs and seasonings.
Add the broth and bring to a light boil.
Toast baguette slices and top them with cheese.
Melt cheese under the broiler.
Ladle soup into bowls, top with toast and garnish with a fresh thyme sprig.
