There are some side items that it would not be Thanksgiving without, and this is one. Who doesn’t love broccoli casserole? It’s been one of my favorites since I was a child. This recipe is classic and does not disappoint.
Serving Size: 8
1 ½ pounds broccoli, trimmed into spears
1 yellow onion, diced fine
1 can cream of mushroom soup
1 cup mayonnaise
1 cup cheddar cheese
2 eggs beaten
1 sleeve Ritz crackers crushed
4 tablespoons butter, melted
Cook the broccoli until it is tender but firm.
In a bowl mix the eggs, soup, mayonnaise, cheese and onion.
Drain the broccoli and arrange it in a lightly greased casserole dish.
Top the broccoli with the sauce mixture.
Sprinkle the casserole with cracker crumbs.
Drizzle the melted butter over the top of the dish.
Bake the casserole in a 350 degree oven for 30 minutes or until bubbling and golden brown.
