My grandmother made this recipe for Brunch Eggs during the holidays and it was fantastic! I make them every Christmas for my family. It makes me think of her and how much I adored her. She was my most special family member and I love carrying on her traditions! They are similar to Eggs Sardou and are sensational!
Serving Size: 6
Ingredients:
6 eggs
6 slices of Muenster cheese
2 tomatoes, thinly sliced
2 onions, thinly sliced
2 green peppers, thinly sliced
⅓ cup of parsley, finely chopped
3 English muffins, buttered and toasted
2 tablespoons of butter
Instructions:
In an electric skillet, sauté onions in butter until they are translucent.
Add the peppers and cook until they are tender.
Add the tomatoes and ¼ cup water.
Cover and cook until tomatoes are tender.
Add the parsley.
Use the back of a spoon to make 6 indentations, evenly spaced.
Crack the eggs and place each egg in a slot.
Cover and cook until the eggs are firm.
Place a slice of cheese on each egg and cover until cheese is melted.
Serve each egg on a buttered and toasted English muffin
I love to serve this recipe with mimosas made with fresh-squeezed orange juice!
