Brunch Eggs

My grandmother made these brunch eggs at the holidays and they are fantastic! I make them every Christmas for my family. It makes me think of her and how much I adored her. She was my most special family member and I love carrying on her traditions! They are similar to Eggs Sardou and are sensational!

six eggs

six slices of muenster cheese

2 tomatoes, sliced thin

2 onions, sliced thin

2 green peppers, sliced thin

⅓ cup parsley finely chopped

3 English muffins buttered and toasted

2 tablespoons butter


In an electric skillet, saute onions in butter until they are translucent.

Add the peppers and cook until they are tender.

Add the tomatoes and ¼ cup water.

Cover and cook until tomatoes are tender.

Add parsley.

Use the back of a spoon to make 6 indentations, evenly spaced.

Crack eggs and place each egg in a slot.

Cover and cook until the eggs are firm.

Place a slice of cheese on each egg and cover until cheese is melted.

Serve each each egg on a buttered and toasted English muffin

I love to serve these with mimosas made with fresh squeezed orange juice!
