Serving Size: 24 Caramels
2 cups sugar
1 can evaporated milk
1 cup corn syrup
1 cup heavy cream
2 tablespoons butter
½ teaspoon vanilla extract
½ tablespoon coarse sea salt
Lightly oil a 9×13 glass baking dish and line it with parchment paper.
Pour sugar, evaporated milk and heavy cream in a large sauce pan.
Place your candy thermometer on the side of the pan.
Bring the mixture to a light boil.
Add in the corn syrup and bring the mixture to 230 degrees.
Stir constantly to prevent burning.
Add butter, vanilla, and sea salt.
Bring the mixture to 240 degrees.
Remove the pan from heat briskly at 240 degrees and pour into the lined dish.
Sprinkle it with sea salt.
Let the caramel cool until set, at least one hour.
Using an oiled knife, cut the caramel into squares.
Wrap each caramel in parchment paper.
