This recipe is so light and delicious. My husband says it tastes like sunshine in a spoon. It is also relatively low in calories. This is the perfect afternoon refresher for spring and summer months!

Ingredients:
1 pineapple cored and cut into small chunks
1 cup sugar
The juice of one lemon
Instructions:
Blend all of the ingredients until the mixture is smooth.
Pour the pineapple mixture into a metal bowl and place in the freezer.
After one hour, whisk the mixture while it is not completely frozen.
Return it to the freezer until frozen solid.
Scoop and serve in a dish or on a sugar cone.
