Green Juice Cocktail

I had the best green juice cocktail at a fun restaurant here in Nulu. I decided to create my own recipe for a fun spring refresher. I like to make my own green juice. I use spinach, celery, cucumber, oranges, pineapple, and apples. I added some vodka, local honey, and fresh lime juice. The result was light and refreshing. Coincidentally, this is the perfect festive cocktail for St. Patrick’s Day too!

Serving Size: 4

For the Juice:

Ingredients:

1 Granny Smith apple, quartered and cored

1 cup of pineapple, cubed

2 cups of spinach, washed and dried

1 orange, rind left on

1 English cucumber

2 stalks of celery

Instructions:

Wash and pat dry the ingredients.

Press them through the juicer.

Use the juice immediately.

For the Cocktail:

Ingredients:

16 ounces of green juice

2 cups of nugget ice

4 ounces of vodka

1/4 cup of lime juice

2 tablespoons of local honey

1 cucumber to slice for garnish

Instructions:

Use a mandoline to slice the cucumber into long thin slices.

Fill your glasses with nugget ice.

Arrange the cucumber slices diagonally in the glasses.

Add ice to a cocktail shaker.

Pour in the vodka, lime juice, and honey.

Add the green juice and shake vigorously.

Pour the cocktail over the ice and enjoy.
