Steamed Artichokes with Garlic Caper Aioli

Artichokes are always so pretty when they are in season. I love artichokes a thousand ways, but this simple and tasty recipe for steamed artichokes with garlic caper aioli is an elegant and flavorful treat. I love the flavor of the aioli, as it really reminds me of New Orleans. Recipes that indulge my wanderlust are a real respite these days. My husband and I enjoyed these one afternoon as a late lunch with a salad. You could serve these at an intimate dinner as well. Either way, this is a great way to savor the flavors of spring!

Ingredients:

2 artichokes
1 lemon
1/2 bunch Italian Parsley
2 tablespoons capers
3 cloves of garlic
1/2 cup of mayonnaise

Instructions:

Prepare the Artichokes:

Put a steamer insert into a large pot and fill the pot with an inch of water.
Clean and trim the artichokes by cutting off the stems and cutting off about 1/2 an inch of the tops.
Remove any loose leaves around the stems and snip the pointy tips of the leaves off.
Zest the lemon and set the zest aside.
Place the artichokes in the steamer basket and use a juicer to dress them in lemon juice.
Steam the artichokes over medium heat for 45 minutes.
Remove the artichokes from the steamer and place them on a dish.
Garnish the artichokes with lemon zest and serve them with aioli.

Make the Aioli:

Mince the garlic.
Finely chop the parsley.
Chop the capers.
In a small dish add the ingredients to the mayo.
Stir the ingredients to combine.
