The weather has been so pretty that it’s such a treat to be outside. Enjoying a game or the races from your favorite outdoor space is a fabulous idea! We love the cute little deck at our office and got a pretty new bistro set so we can enjoy nice afternoons downtown!
Beer cheese is as simple as it sounds, but there are a few things to consider. First, you will want to shred the cheese yourself. Second, the spread should be served cold, so you will want to refridgerate it prior to serving it. Third, you could use any beer you prefer, and I really like the flavor of a delicious pale ale. Serving Size: Serves 8
Ingredients:
Two 8 ounce blocks of sharp cheddar cheese
3 cloves of garlic
1/2 tablespoon smoked paprika
1/2 teaspoon cayenne pepper
1/2 teaspoon salt
4-6 ounces of Keeneland Pale Ale
Assorted crackers and crudites for serving
Instructions:
Shred the cheese on a box grater.
Put the cheese in a food processer and add the minced garlic.
Add the spices.
Add the beer 2 ounces at a time, pulsing the food processer a few times in between.
The mixture should be creamy and smooth.
Refrigerate the mixture in an airtight container.
Serve with crackers and crudites.
