Spring is in bloom, and so is the season for entertaining. The Lee Brothers’ Pimento Cheese recipe is a classic go-to for your menu. You can serve this with lavosh, which makes a pretty presentation, or pita chips and crackers. You can also serve this as tea sandwiches. Any way you choose, your guests will love this smoky, spicy spread.

As far as recipes for Pimento Cheese, this is hands down the best I have had. I didn’t alter the recipe and made certain to follow the instructions exactly. This meant tracking down the Aleppo Pepper, which took a trip to Penzeys Spices. It added a depth of flavor that set the recipe apart from others I have had. Serving Size: 8 for Appetizers or 4 Sandwiches

Ingredients:

1 8-ounce block of extra sharp cheddar cheese

2 ounces of cream cheese, softened

1/2 cup of jarred roasted red peppers, finely diced

3 tablespoons of Hellmann’s mayonnaise

1/2 teaspoon Aleppo Pepper

Instructions:

Use a box grater to shred the block of extra sharp cheddar.

In a medium glass bowl, add the grated cheddar, softened cream cheese, and roasted red peppers.

Top the mixture with mayonnaise and Aleppo Pepper.

With a wooden spoon, blend the mixture until it is well combined and the cream cheese is fully incorporated into the spread.

Refrigerate the mixture for at least an hour in an air-tight container.

Enjoy with your favorite crackers and crudités!
