Heirloom Tomato Caprese

Summer entertaining should be fun and effortless. This Heirloom Tomato Caprese is simple and lets the flavors of summer shine. Ingredients:

For the Heirloom Tomato Caprese:

6 large heirloom tomatoes

1 pound of cherry heirloom tomatoes

16 ounces of fresh mozzarella

1 cup of fresh basil leaves

Dill blossoms for garnish

For the dressing:

¼ cup of balsamic vinegar

¾ cup of extra virgin olive oil

1 tablespoon of dijon mustard

2 cloves of garlic, minced

2 teaspoons of sugar

1 teaspoon of kosher salt

1 teaspoon of fresh cracked pepper

Instructions:

For the Heirloom Tomato Caprese:

Use a serrated knife to slice your tomatoes.

Arrange the tomatoes on your serving platter.

Cut the fresh mozzarella into slices.

Tuck the mozzarella slices in between the tomatoes.

Place fresh basil leaves throughout the salad.

Add the dill blossoms to garnish the platter.

For the dressing:

Mince the garlic.

In. a small bowl, whisk the olive oil and balsamic vinegar together.

Add the sugar, dijon mustard, and garlic.

Whisk the dressing until the oil has emulsified.

Season the dressing with salt and pepper.

Serve the dressing alongside the salad.
