Vegetarian Creole Gumbo

This Vegetarian Creole Gumbo is super light and delicious! This will definitely warm you up and has a kick too! You’ll definitely want to keep this on file for Mardi Gras!

2 tablespoons butter

2 shallots sliced

1 cup sliced celery

5 mini sweet peppers sliced

1 zucchini chopped

3 tomatoes chopped

2 cloves of garlic minced

2 cups vegetable broth

½ teaspoon dried basil

½ teaspoon dried thyme

½ teaspoon dried oregano

½ teaspoon cayenne

1 teaspoon paprika

a few dashes of Tabasco

2 cups cooked rice


Saute shallots and garlic in butter until they are translucent.

Add in remaining vegetables and cook until they are tender.

Add the broth and spices and cook until gumbo has thickened and reduced.

Serve the gumbo over cooked rice with a few dashes of Tabasco.
