Vegetarian Creole Gumbo

This Vegetarian Creole Gumbo is super light and delicious! This will definitely warm you up and has a kick too! You’ll definitely want to keep this on file for Mardi Gras!

Serving Size: 6


2 tablespoons of butter

2 shallots, thinly sliced

1 cup celery, sliced

5 mini sweet peppers, sliced

1 zucchini, chopped

3 tomatoes, chopped

2 cloves of garlic, minced

2 cups of vegetable broth

½ teaspoon of dried basil

½ teaspoon of dried thyme

½ teaspoon of dried oregano

½ teaspoon of cayenne pepper

1 teaspoon of paprika

A few dashes of Tabasco

2 cups of cooked rice


Sauté shallots and garlic in butter until they are translucent.

Add in remaining vegetables and cook until they are tender.

Add the broth and spices and cook until the gumbo has thickened and reduced.

Serve the gumbo over cooked rice with a few dashes of Tabasco.
