Lemon Thyme Asparagus

Asparagus is in season now and comes in the most insane colors these days. We found a beautiful bunch at our local market and chose this recipe for lemon thyme asparagus as the perfect addition to dinner. Searing the lemons adds fantastic flavor. This is a simple preparation that adds some style to your dinner. You can savor the flavors of the season too!

Serving Size: Serves 4

Ingredients:

3 lemons

1 bunch of asparagus

6 sprigs of thyme

1/3 cup olive oil

Salt and pepper to taste

Instructions:

Pour two tablespoons of olive oil in a cast-iron skillet and warm it over medium heat.

Cut the lemons in half.

Once the skillet is warm and the oil is shimmering, place the lemons cut side down on the skillet.

Let them cook until they have nice char marks and set them aside on a plate.

Heat the oven to 400 degrees.

Trim and wash the asparagus.

Place the asparagus in a casserole dish.

Toss it in the olive oil, salt, and pepper.

Strip the leaves from the sprigs of thyme and add them to the asparagus.

When the oven has reached 400 degrees, roast the asparagus until it is tender.

Squeeze the seared lemons over the asparagus and serve.
