Happy Friday! This recipe for a Rosemary Blackberry Bramble is smoky and delicious! I love a fun cocktail on the weekend and these are definitely that. The herby flavor of the rosemary simple syrup is the perfect complement to the smoky mezcal. The lime and blackberries add a tart and fruity flavor that is so tasty! Cheers to a great weekend!

Serving Size: Serves 4

Ingredients:

For the Rosemary Blackberry Bramble:
4 ounces mezcal
1 lime
Rosemary Simple Syrup
1 pint of blackberries
Club soda
4 cups of nugget ice
4 sprigs of rosemary

For the Rosemary Simple Syrup:
1/2 cup sugar
1/2 cup water
2 sprigs of rosemary

Instructions:

For the Rosemary Syrup:
In a small saucepan, mix 1/2 cup sugar and 1/2 cup water.
Add two sprigs of rosemary.
Simmer the mixture for ten minutes.
Strain the rosemary from the syrup and store it in an airtight container.
The syrup will keep, in the refrigerator, for two weeks.

For the Rosemary Blackberry Bramble:
Place four or five blackberries at the bottom of each glass.
Top the blackberries with two tablespoons of simple syrup.
Add a tablespoon of lime juice to each glass.
Muddle the blackberries in the syrup and lime juice.
Top the mixture with nugget ice, packing each glass.
Pour one ounce of mezcal over the ice.
Top each glass with club soda.
Garnish each cocktail with a pick of blackberries and a spring of rosemary.
