Broccoli and Cheddar Quiche

This recipe for Broccoli and Cheddar Quiche is simple and delicious! The addition of broccoli and extra sharp cheddar makes it decadent and flavorful! I found the most beautiful pie crust at our local bakery and thought it would be fun to have a yummy winter brunch. I added some roasted potatoes, fresh fruit, and iced coffee and it was the perfect weekend treat!

The key to making a quiche fluffy is the heavy cream. It might be a bit decadent, but it really does make a difference. Also, you will want to make sure your veggies are dry before adding them to your custard. To achieve this, you will want to drain the onions after you sauté them and pat the broccoli dry after you steam it. This will also prevent your crust from being soggy. Ingredients:

1 pie crust

1 tablespoon of butter

6 eggs

3/4 cup of heavy cream

1 cup of shredded extra sharp cheddar cheese

I white onion, finely diced

1 broccoli crown, cut into small bite-sized pieces

Salt and pepper to taste

Instructions:

Set the oven to 350 degrees.

Steam the broccoli.

In a large pan, sauté the onion in butter until it is translucent.

Using a fine mesh strainer, drain the remaining liquid from the onions.

In a large bowl, whisk the eggs with the cream.

Add in the shredded cheddar and stir the mixture.

Add the broccoli and onions to the mixture and season it with salt and pepper.

Pour the egg mixture into the pie crust.

Bake the quiche until it is golden brown and the center is set, about 45 minutes.
