Classics like mashed potatoes are a staple at the holidays. I like to add sour cream and chives to make this delicious side a little more decadent! This could be a yummy weeknight side to have with dinner or a fabulous dish to bring to a holiday meal!
Serving Size: 8
4 pounds of potatoes
1 stick of butter
1 cup of milk
1 cup of sour cream
1 box of chives
salt and pepper to taste
Peel the potatoes and cut them into 1 inch cubes.
Boil the potatoes until they are tender.
Drain the potatoes.
Return the potatoes to the pot.
Add the butter in tablespoon sized pieces.
Add the milk and sour cream.
Use a potato masher to blend the potatoes until they are creamy.
Chop the chives into half inch pieces.
Add the chives and the salt and pepper.
Use any remaining chives to garnish the dish.
