Making your own focaccia is a fun and rewarding process. My daughter absolutely loves this recipe and it’s fun to make something that makes her so happy. I used it to make these fantastic Focaccia Caprese Sandwiches. I love a Caprese sandwich and this version is delicious! I used my favorite pesto recipe, fresh mozzarella, and juicy tomatoes to create this. It may take an extra step to make your own pesto, but the result is so much better than a jarred pesto. It’s fresh, bright, and super tasty.
Serving Size: Serves 4
1 loaf of focaccia (find the recipe here)
1 cup of pesto (find the recipe here)
8 ounces of fresh mozzarella, sliced
1 large, ripe tomato
After your focaccia has cooled, cut it into four squares.
Cut the squares in half, diagonally.
Slice the halves open.
Spread a layer of pesto on each half.
Layer on the fresh mozzarella and tomato slices.
