Roasted Heirloom Tomato Salsa

The rich flavor that you get from roasting the vegetables until they are slightly charred is delicious. The jalapeño and chipotle peppers give it just the right amount of spice, too. Serving Size: Serves 8

Ingredients:

2 pounds of heirloom tomatoes, halved

1 large white onion, peeled and sliced

1 jalapeño, halved and seeded

5 garlic cloves, peeled

1/4 cup of fresh cilantro, chopped

2 chipotle peppers in adobo sauce

1 tablespoon of fresh lime juice

1 teaspoon of salt

1 teaspoon of cumin

Instructions:

Set the broiler to high.

Place the tomato halves and jalapeño pepper on a baking sheet with the onion slices.

Broil the vegetables until they are slightly charred and blistered.

After the vegetables have cooled, add them to a food processor.

Add in the cilantro, lime juice, cumin, salt, and chipotle peppers.

Pulse the mixture until the salsa is at your preferred consistency.

Serve with tortilla chips and enjoy!
