Potato Leek Soup

Ingredients:

3 large leeks

2 pounds of yellow potatoes, peeled and cubed

3 cloves of garlic, minced

3 tablespoons of butter

4 cups of vegetable broth

1 teaspoon of dried thyme

1 teaspoon of salt

1 cup of half and half

1 cup of whole milk

Fresh cracked pepper to taste

Chives for garnish

Instructions:

Trim off the dark green parts of the leeks and discard them.

Slice the white and light green parts.

Submerge the sliced leeks in a bowl of cold water, to wash away any debris.

Drain the leeks and pat them dry.

In a large pot, cook the garlic in the butter, until it is fragrant.

Add the leeks and cook until they are tender.

Add the potatoes, broth, and thyme.

Cook the soup until the potatoes are tender.

Add the cream, milk, and salt.

Use an immersion blender to blend the soup until it is creamy.

Season with pepper to your preference.

Garnish with chives and enjoy!
