Summer is here and I could not be more thrilled. We are looking forward to a relaxed pace and enjoying our time together. The holiday weekend marks the beginning of all the fun to come. I hope you are enjoying your holiday and have fun plans for an exciting season! This festive watermelon berry salad would be fun to serve when you are entertaining this summer. The sweet watermelon pairs nicely with the salty feta. It’s super fun and festive when you cut the melon into stars and the process is super simple. I love adding the tart berries with the bite of the arugula. I finished the salad off with a classic balsamic vinaigrette. You can find more fun salads here and here! Cheers to the start of summer!
Ingredients:
For the Salad:
1 5-ounce box of arugula
1 8-ounce block of feta cheese
1 small seedless watermelon
1 small red onion, finely sliced
1 cup of blueberries
1 cup of blackberries
Fresh cracked pepper
For the dressing:
¼ cup of balsamic vinegar
¾ cup of extra virgin olive oil
1 tablespoon of dijon mustard
2 cloves of garlic, minced
2 teaspoons of sugar
1 teaspoon of kosher salt
1 teaspoon of fresh cracked pepper
Instructions:
For the salad:
Slice the watermelon into 3/4 inch thick slices.
Use a star-shaped cookie cutter to cut the watermelon.
Cut the feta into cubes.
Season the feta cubes with fresh cracked pepper.
Fill your serving platter with arugula.
Add the blueberries and blackberries to the platter.
Arrange the watermelon on the salad.
Finish the salad with feta cheese and onion slices.
For the dressing:
Mince the garlic.
In. a small bowl, whisk the olive oil and balsamic vinegar together.
Add the sugar, dijon mustard, and garlic.
Whisk the dressing until the oil has emulsified.
Season the dressing with salt and pepper.
